Greg McNally, is in every sense of the word, a restaurateur. He’s passionate about conceiving, funding,
developing, operating, expanding, supporting, fixing, selling and of course, eating in restaurants.

Currently running a restaurant profit enhancement consultancy as well as teaching at the country’s
largest culinary school, Greg has been involved in just about every aspect of the restaurant industry.
He is also in the policy arena, holding a seat on the CA Restaurant Association LA Chapter Board, and
actively supporting CREF – the education foundation working to develop the next restaurant stars and
business leaders.

Greg’s career began doing just about every front-of-house role in some of LA and Aspen’s most exciting
restaurants in the early 1990s. He went on at the age of 24, to open his first restaurant – a quick
service Mexican concept – in San Francisco and grew it to 3 locations before selling. He also opened a
Cajun-inspired QSR and sold that as well, before heading to Los Angeles to open a new restaurant in
Manhattan Beach.

After converting his LA concept into a night club and then selling, his used that experience to move into
consulting, helping restaurants effectively train and safety-certify their staff. Not satisfied yet that he’d
experienced all he could in restaurant operations, Greg joined Grill Concepts Inc., a publicly-traded,
national chain, a skillfully navigated corporate hospitality systems and structure.

Today, in addition to his work at the Art Institute’s International Culinary School where he’s teaching
some of the most in-demand courses, Greg has expanded his consulting work to helping independent
operators maximize the profit and potential of their operations, as well as secure the best funding
structure to expand into new markets and concepts.

Greg is based in Los Angeles and supports clients in both Orange and Los Angeles counties.
